Ingredients:
- 4 ripe organically grown bananas, mashed
- 6 cups cubed day-old bread (French or Challah)
- 2 cups organic milk
- 1 cup heavy cream
- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped organic walnuts
- 1/4 cup unsalted butter, melted
- Powdered sugar (for dusting)
- Whipped cream (for serving)
Instructions:
Preheat your oven to 175°C and grease a baking dish.In a large mixing bowl, combine the mashed bananas, cubed bread, and chopped walnuts.
In a separate bowl, whisk together the milk, heavy cream, eggs, granulated sugar, vanilla extract, cinnamon, and nutmeg until well combined.
Pour the wet mixture over the bread mixture, ensuring all bread cubes are well-coated. Let it sit for 10 minutes to allow the bread to soak up the delicious flavours.
Drizzle the melted butter over the top and gently fold it into the mixture.
Transfer the mixture to the prepared baking dish, spreading it evenly.
Bake in the preheated oven for 45-50 minutes or until the top is golden brown and the center is set.
Remove from the oven and let it cool slightly. Dust the top with powdered sugar for a snowy effect.
Serve warm, topped with a dollop of whipped cream.
