Ingredients:

  • 4 stalks of organic celery, with leaves
  • 2 organic apples, cored and sliced
  • 1/4 cup of chopped walnuts
  • 1/4 cup of plain yogurt
  • 2 tablespoons of honey
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions:

Wash the celery and separate the leaves from the stalks.

Chop the stalks into bite-sized pieces and reserve the leaves for later.

In a large bowl, toss the celery, apples, and walnuts together.

In a small bowl, whisk the yogurt, honey, lemon juice, salt, and pepper until well combined.

Drizzle the dressing over the salad and toss to coat.

Sprinkle the celery leaves over the salad as a garnish.
