Warm up with tropical flavours on chilly days with our cozy Mango Coconut Oatmeal recipe. This delightful dish combines the tropical flavours of mangoes with the creaminess of coconut to create a comforting and nourishing breakfast option.
Ingredients:
- 1 cup organic rolled oats (GF option: brown rice flakes or quinoa flakes)
- 1 ½ cups Chantal Organic coconut milk
- 1 ripe USDA certified organic mango, peeled and diced
- 2 tablespoons shredded coconut
- 1 tablespoon honey or maple syrup (optional)
- Pinch of salt
Instructions:
- In a saucepan, combine the rolled oats, coconut milk, and a pinch of salt. Bring it to a gentle boil over medium heat, stirring occasionally.
- Reduce the heat to low and simmer the oatmeal for about 5 minutes or until it reaches your desired consistency. Stir occasionally to prevent sticking.
- Once the oatmeal is cooked, remove it from the heat and let it cool slightly.
- In a separate bowl, combine the diced mango and shredded coconut.
