- 3 Durham Farms Organic Eggs
- Handful of BioGro Certified Organic Perpetual Spinach leaves
- 1/2 cup cauliflower florets
- Salt and pepper to taste

- Start by blanching the cauliflower florets until they're tender but still crisp. Drain and set them aside.
- Whisk the Durham Farms Organic Free Range Eggs in a bowl, season with a pinch of salt and pepper, and mix in the blanched cauliflower.
