Ingredients:
- 1 ripe spray-free pineapple from Fiji, diced
- 2 juicy oranges, peeled and segmented
- 1/2 red onion, finely chopped
- 1 small red chili, seeds removed and finely chopped
- Fresh cilantro leaves, chopped
- Juice of 1 lime
- Salt and pepper, to taste
Instructions:
- In a bowl, gently combine the diced pineapple, juicy orange segments, red onion, and red chili.
- Add the fresh cilantro leaves and squeeze the lime juice over the mixture.
- Season with salt and pepper according to your taste.
- Allow the salsa to rest for a few minutes, letting the flavours meld together beautifully.
