This vibrant dish perfectly balances the sweetness of our Pick of the Week (week of September 25th) Purple Broccoletti with the umami richness of anchovies. It's a flavour explosion that will leave your taste buds singing.
Ingredients:
- 250g pasta of your choice
- 1 bunch of Purple Broccoletti, stems and leaves included, chopped
- 2 cloves garlic, minced
- 4-6 anchovy fillets, finely chopped (adjust to taste)
- 2 tablespoons olive oil
- Zest of 1 lemon
- Red pepper flakes (optional, for some heat)
- Grated Parmesan cheese, for serving
- Salt and pepper, to taste
Instructions:
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped anchovies. Sauté for a minute or two until the garlic is fragrant and the anchovies start to dissolve.
- Toss in the Purple Broccoletti, stirring occasionally, and sauté for about 5-7 minutes, or until they become tender and slightly crispy at the edges.
- Add the cooked pasta to the skillet, along with lemon zest and a pinch of red pepper flakes if you desire some heat. Toss everything together to combine. Season with salt and pepper to taste.
- Serve your Purple Broccoletti Pasta with a generous sprinkle of grated Parmesan cheese on top.
