The roasted garlic adds a sweet and nutty depth to the mash, while the purple color makes it a stunning side dish for any occasion.
Ingredients:
- 4 medium-sized Purple Heart potatoes
- 1 head of garlic
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh chives for garnish
Instructions:
Preheat your oven to 200°C
Cut the top off the garlic head to expose the cloves. Place it on a sheet of foil, drizzle with olive oil, and wrap it tightly. Roast in the oven for about 30-40 minutes, or until the cloves are soft and golden.
While the garlic is roasting, peel and chop the Purple Heart potatoes into chunks. Boil them until they are fork-tender.
Once the garlic is roasted, squeeze the softened cloves into a bowl.
Mash the boiled Purple Heart potatoes and mix in the roasted garlic paste. Add olive oil, salt, and pepper to taste. For extra creaminess, a splash of organic almond milk works wonders!
