Today, we’re wrapping things up with a flourish, showcasing how sustainable cooking can be a feast for your taste buds and gentle on our planet.
Zero-Waste Zest: Citrus Peel Marmalade
Ingredients:
- Peels of 3 organic oranges
- Peels of 2 organic lemons
- 1 organic apple, grated (including skin and core)
- 1 teaspoon of organic cinnamon
- 2 cups of water
- 2 cups of organic sugar
Method:
Thinly slice the citrus peels and combine with grated apple in a large pot.
Add water and bring to a boil. Simmer until the peels are tender.
Stir in sugar and cinnamon, and cook until the mixture thickens into a marmalade.
Cool and transfer to sterilised jars.
This marmalade is perfect on toast, as a cake filling, or even paired with cheese.
Full Circle Fritters: Broccoli Stem Delights
Ingredients:
- Stems from 2 heads of organic broccoli
- 1 organic free-range egg
- 1/4 cup of organic flour
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- Organic olive oil for frying
Method:
Grate the broccoli stems and mix with egg, flour, garlic powder, salt, and pepper.
Heat oil in a pan and spoon in the fritter mixture, flattening with a spatula.
Fry until golden on both sides.
Serve with a dollop of yoghurt or your favourite dip.
Sweet Endings: Watermelon Rind Chutney
Ingredients:
- Rind from 1 organic watermelon, green skin removed
- 1 cup of organic vinegar
- 1/2 cup of organic sugar
- 1 teaspoon of mixed spice
- 1 organic onion, finely chopped
- 1 organic chilli, deseeded and chopped
Method:
Dice the watermelon rind and combine with all ingredients in a pot.
Bring to a boil and then simmer until the rind is soft and the mixture has a chutney consistency.
Cool and serve with curries, grilled meats, or as a sandwich spread.
