Made with sweet and juicy summer pineapple from Fiji and savoury tofu, it's a delicious and healthy dish that's perfect for vegans and vegetarians alike. Ingredients:
- 1 block of Tonzu firm tofu, drained and pressed
- 1 tablespoon of Ceres Organics tamari soy sauce
- 1 tablespoon of Ceres Organics toasted sesame oil
- 2 cloves of garlic, minced
- 1 red capsicum, diced
- 1 small brown onion, diced
- 2 cups of cooked brown rice
- 1 cup of diced spray-free fresh pineapple
- 1/4 cup of unsweetened pineapple juice
- 1/4 cup of Ceres Organics tamari soy sauce
- 1/4 cup of rice vinegar
- 2 tablespoons of coconut sugar
- 1/4 teaspoon of red pepper flakes
- 2 tablespoons of coconut oil
- Salt and pepper to taste
- Spring onions, chopped (for garnish)
Instructions:
- Cut the Tonzu firm tofu into small cubes, and then toss it with 1 tablespoon of Ceres Organics tamari soy sauce and 1 tablespoon of Ceres Organics toasted sesame oil. Let it marinate for at least 20 minutes.
- In a large pan, heat 2 tablespoons of coconut oil over medium-high heat. Add the tofu and sauté until it is golden brown.
- Add the garlic, red capsicum, and brown onion, and sauté until they are softened.
- Add the cooked rice, spray-free fresh pineapple, pineapple juice, tamari, rice vinegar, coconut sugar, and red pepper flakes. Stir until everything is well combined and heated through.
- Season with salt and pepper to taste.
- Garnish with spring onions and serve hot.
